This recipe comes from our friends Allen and Sue, who love the southwest and the flavors from that region. This is quick to prepare and full of protein and fiber, naturally. It is a smile dish, and you can put it on top of brown rice or cous cous, which makes the smile even better. You can also scoop the stew into taco shells, corn tortillas, or enchiladas.
Procedure:
Put ingredients into a pot and bring to a boil. Reduce heat to medium and simmer for 10 minutes, stirring occasionally. OK to simmer for several hours.
